    Sweet potato and coconut curry

    This was lovely, I gave it a try and really enjoyed it, I had to look up what Passata is, and it’s a tomato sauce - why don’t they just say that!

    I’ve put the ingredients below to help you make your shopping list

    4 tbsp olive oil
    2 large onions, halved and sliced
    3 garlic cloves, crushed thumb-sized piece root ginger peeled
    1 tsp paprika
    ½ tsp cayenne
    2 red chillies, deseeded and sliced
    2 red peppers, deseeded and sliced
    250g red cabbage shredded
    1kg sweet potatoes peeled and chopped into chunks
    300g passata
    400ml coconut milk
    2 tbsp peanut butter


    To serve
    small bunch fresh coriander, chopped
    cooked couscous
    (or gluten-free alternative)

    Oooh lovely, I love sweet potato and coconut always tastes good in curry, I will be giving this one a go

    I’ve made a similar curry to this and it is so delicious, not heard of Passat a I wonder if that is to thicken it?
