Coconut and Lime rice pudding

This is a great recipe I came across in a magazine for Plant-Based eating, so it is suitable for those Vegans, or those wishing to follow a plant based lifestyle.

This recipe serves two generous servings

250g short grain rice, rinse in cold water and drain.
400g tin of full fat coconut milk
400mls of unsweetened, non-dairy milk (almond, cashew etc)
2 limes, zest only
1 tsp of vanilla extract
1 tbsp of coconut sugar


Place all of the ingredients into a pan and bring to a slow simmer, on a low heat. leave to cook gently, stirring occasionally until the rice is tender.

I topped mine with seeds and berries, but you could add mango, or pineapple to really lift the flavours.
