    Sweet Potato Falafels

    Here is a great, simple recipe for falafels

    Falafels
    350g sweet potato (steamed)
    Half a red onion (lightly fried)
    Half a red pepper (diced and roasted)
    Handful of coriander
    2 garlic gloves (crushed)
    5-10 teaspoons of chickpea flour
    BBQ spices (cumin, Turmeric, cayenne pepper, coriander, chilli, Paprika).
    Salt & Pepper.

    Mash or blend the potato and combine all the ingredients. Add chickpea flour as required to get a consistency you can mould into balls and then bake at 200 degrees in a fan oven for ~20 minutes!

    I made these the other day, but swapped the red pepper for sun dried tomatoes, and they were beautiful. it is worth using a bit of the oil from the jar too, it helps to bind the whole ingredients.
